A recipe from my uni times that is easy and economic which can be rustled up from tins and packets in the store cupboard. Quick and comforting one-pot meal and the answer to your weeknight dinner needs.
Ingredients
- Olive oil
- 1 chopped onion
- 1 chopped garlic
- 400gr chopped tomatoes (fresh or canned)
- 1tsp sugar
- Pasta (penne or fusilli)
- 100gr drained tuna (canned)
- Basil leaves
- black olives (optional)
Directions
- Heat the oil in a pan, throw in the onion and cook for a couple of minutes
- Stir in the garlic, tomatoes, and sugar
- Season with salt and pepper and bring to the boil
- Give it a good stir, then reduce the heat and simmer for 5 minutes
- Bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions
- Flake the tuna into the sauce and heat through
- Drain the pasta, return to the pan and stir in the sauce
- Add basil leaves and black olives
